Recipe for oat milk and cookies for the remaining pulp

I’m so excited about making my own oat milk that I’ve been experimenting a bit with different recipes to get a flavour that I like. Here’s what I’ve settled on for now:

  • 2 cups oats
  • 1L water
  • 1/2 tsp ground cinnamon
  • 1-2 tbsp maple syrup (depending on how sweet you like it)
  • a small slice of lemon peel
  • 3 tsp calcium powder (I use Heiltropfen calcium carbonate but there are plenty of other brands available if you want to use something else)

With the remaining pulp, I’ve been following this recipe chocolate almond butter cookies but I replace the 1 1/3 cups of flour with the remaining oat pulp and then top it up to 1 1/3 cups with flour. It usually works out at just over 1/2 cup of flour. These cookies are amazing!
