I’ve had a request for my chocolate cake recipe. This is what I make with the almond pulp which is leftover from making almond milk. You can use any flour in this recipe. I have used so many different types over the past couple of months because the shops have run out of regular wheat flour but the cake is always nice.
Ingredients
2 cups almond pulp (I use the pulp leftover from making 2L of almond milk)
1.5 cups of flour
3/4 cup of sugar
1 cup of almond milk
1 tsp vinegar
1.5 tsp vanilla essence
1/3 cup cocoa
1 tsp baking soda
2 tsp baking powder
1/3 cup vegetable oil
Mix the almond milk with the vinegar and set aside to curdle. Meanwhile, mix all the dry ingredients together. Add the vanilla essence and oil to the milk and then add to the dry ingredients. Stir together and bake in a 180C oven for about 30-45 minutes.
