The Brits are known for their scones but unless you go to a vegan cafe they’re always packed full of butter and cream. It’s a shame because vegan ones are easy to make and delicious. You can even make the whipped cream without using any cow’s milk. I used coconut cream. Here’s the recipe:
2 cups flour (I use wholemeal flour but feel free to use whatever you prefer)
2 tsp baking powder
1 tbsp vinegar
1 tbsp ground flaxseed
3/4 cup oat milk
1/4 cup plant oil of your choice
1 cup currants, dates, or raisins
A variation on these is to include two mashed bananas and instead of currants, dates, or raisins, pop some frozen berries on the top just before they go in the oven. My kids love this banana version and the banana gives them a bit of creaminess.
Sift the flour and baking powder into a bowl then mix. Add all the other ingredients and stir until just combined. Don’t mix it too much. Then shape into cubes and back at 180C for about 15-20 mins. It makes either 6 large scones or 12 small ones.
For the cream you can use coconut cream. Buy coconut cream rather than milk then chill it in the fridge for an hour or two and whisk until light and fluffy.
Then eat.
