My mother-in-law shared this delicious recipe with me and I’ve modified it slightly and am sharing it now with you. These balls are a hit with the kids so it’s a good way to get fussy eaters to eat beans. They can be modified for adults with the addition of whisky but I think they’re fine as they are.

1 can of black beans
1 tbsp almond butter
8 Medjool dates
3 tbsp cocoa powder
1 tsp vanilla
1 tbsp date syrup
1/2 cup mixed nuts (I used half almonds and half walnuts)
Desiccated coconut for coating
Mix everything up (except the coconut) in a food processor then roll into balls. Roll each ball in the desiccated coconut then refrigerate.
