Vegan panforte

Ben’s mother often makes panforte during the Christmas period and it’s one of the yummiest things I’ve ever eaten. I thought I’d try making a vegan panforte this morning and it turned out beautifully! It’s dangerously delicious which means I’ll need to find some self-control to avoid stuffing my face. I used this recipe but modified it slightly because I don’t like big chunks of peel. Here are my ingredients:

2.5 cups mixed chopped nuts (I used almonds, walnuts, cashews, and brazil nuts – I didn’t remove the skins because that’s where the good nutrients are!  I also didn’t roast them first)
1.5 cups of raisins and currants
Finely grated skin of two oranges
0.5 cup of cacao powder
1 tsp ground cinnamon
1 tsp ground mixed spice
1 cup plain flour
0.5 cup agave syrup (it’s much cheaper than maple syrup)
0.5 cup raw sugar
3 tbsp olive oil
0.5 cup of boiled water

Mix all the dry ingredients. Put the agave, sugar, olive oil, and water in a small saucepan and heat until all the sugar has dissolved then mix with the dry ingredients. Bake in a moderate oven for about 25 minutes. Leave to cool then sprinkle with icing sugar and eat!
