Elizabeth has been cooking like crazy these holidays. She can read and follow a recipe almost entirely on her own which is impressive for an 8-year-old. One night she made dinner and informed us that this was her “signature dish”. I think she’s watched Zumbo’s Just Desserts a few too many times.
On Monday she made a zucchini chocolate cake and did everything except grate the zucchini which I did for her. She found all the ingredients herself, measured them, and mixed it all up. I was so impressed and it tasted delicious.
Last week she made some chocolate tarts with a chocolate ganache. This was much harder than she was expecting and there were tears but the end result was impressive.
The week before that she made chocolate muffins and decorated them herself with wild strawberries from our garden. They were delicious!

I think it’s great that Elizabeth is so go getting and wants to get involved with and do so many things.

I agree. It was especially nice when she made a cake for a number of visitors we had earlier this week. It saved me having to do it.
