I’ve been meaning to share photos of dinner each night because that’s what people do these days isn’t it? Plus I’m sure everyone is dying to see what I eat.
Last night was a lentil almond curry, make with beluga lentils but red lentils would work just as well. We had it with brown rice.

On Sunday and Monday nights we have spaghetti bolognese made with red lentils. If you can make spaghetti bolognese with mince then you can make it with red lentils. It’s basically the same dish; just replace the meat with lentils. Easy. We have it two nights in a row because Monday nights are busy so I make a big batch on Sunday so there’s enough for Monday night too. We also had some leftover tabbouleh from the night before which went well with it too.
